The Lychee Raspberry Bellini came beautifully, deep rose in colour, topped with a white foam and a fresh raspberry on the rim.

The Apricot Honey Highball served with an apple floating in it, cold and refreshing with a gentle sweetness that made it easy to drink.

But the star? The Yuzu Whisky Sour. Topped with a thick foam top and a little dot right in the centre. Citrusy, smooth, and well-balanced.

Parmesan Potatoes with Truffle Aioli. Smashed, golden, crispy, loaded with parmesan and herbs, served with a creamy truffle dip on the side.

The Charred Octopus was beautifully plated, tender slices of octopus fanned across the plate, with creamy hummus in the centre topped with broccoli, finished with a chili crunch.

Then came the Spaghetti Carbonara. A rich egg-based sauce coating every strand of pasta, with crispy guanciale. Topped with grated cheese and cracked black pepper. Simple, classic, and absolutely delicious.

The Cherry Blueberry Crumble was pure comfort in a bowl. Warm, jammy fruit underneath a golden, crunchy almond topping, with a scoop of creamy gelato. Sweet, warm, cold, crunchy all at once.

And the Tiramisu, scooped tableside and dusted with cocoa. Strong espresso and rum flavour, light mascarpone cream, soft ladyfinger layers. Classic done right.
